Fight Scenes

What makes a good fight scene? Some people say it is the blood and guts that come out after each blow. I believe the a good fight scene is created when the viewer does not know what is coming next. Every hit is different, and always ends different then what you would expect. Or when the odds are against the good guy. When he has to use the environment around him to win the fight. For instance in Apocolipto, the main character is running from bad dudes and he uses the poison off a poison dart frog to kill the bad guys.
